What type of oven do I need for this type of recipe ?
Any basic home oven will work, as long as you can control the temperature accurately. Since macarons are very sensitive to temperature fluctuations, gas ovens can be tricky and may not give consistent results. A conventional or convection oven is usually more reliable.
